Partial hydrophobic modification of alginate using dodecenyl succinic anhydride for fish oil encapsulation

Background. As a hydrophilic compound, alginate needs to be modified perform both as an emulsifier and matrix for fish oil encapsulation. Dodecenyl succinic anhydride (DSA) was selected the modification due its mild reaction conditions fact that no side product is generated. The purposes of this research were prepare partial hydrophobic groups alginate, which subsequently used encapsulant. Material methods. viscosity average molecular weight (Mv) commercial adjusted using sonication. degraded DSA by mixing alginates in desired ratio 4 h at pH = 10. emulsion stabilized freeze-dried obtain particles. effect Mv alginate-DSA analyzed stability. performance native encapsulation also compared. Results. Alginate influenced described degree substitution. This reduced oxidation up 8%. 400 kg/mol mol 1:4 prevented separation 18 h. dynamic second-order model well fitted represent (R2 > 0.89). showed higher loading capacity, better anti-rehydration properties than one. use <4% after 24 Conclusion. Modification improved capability stabilize encapsulating oil.
